Mosto brings Manila to Bali for one night, welcoming Baka Ramen for a dinner with Chef Rafa Joseph and Chef Lorenzo De Petris behind the pass.
Rafa, the chef-owner behind Manila’s Baka Ramen, has quietly become one of the city’s most exciting chefs, known for his stripped-back approach to cooking that’s built on simplicity, subtraction and balance. Two neighbourhood spots that have built a following around simple, unfussy cooking. At Baka Ramen, Japanese technique comes through in modern, flavour-driven dishes, while Bar Koji keeps things stripped back with no-frills plates and a relaxed bar feel.
For one service, Rafa and Lorenzo will cook side by side, bringing together the food they believe in. Mosto’s produce-driven cooking meets Baka Ramen’s Japanese influence in a menu that moves between flavours, techniques and ingredients without trying too hard to fit into one category.
It’s a one-night meeting of Manila and Bali, with both kitchens working the same pass and seeing where the menu goes.
