DA MARIA PRESENTS: A NIGHT IN NAPOLI
On Tuesday 22 July, Da Maria welcomes back a familiar face—Naples-born pizzaiolo Luca Di Napoli, the man who helped shape the restaurant’s earliest beginnings. A fourth-generation pizza master, Luca returns to Bali for one night only, bringing with him the flavours, stories, and spirit of Southern Italy.
Luca first stepped into the Da Maria kitchen nearly a decade ago, training the opening crew and perfecting the dough recipe that set the tone for the venue’s signature Italian style. His influence still runs through every pizza, and now, for A Night in Napoli, he’s back behind the pass for a special collaboration with Executive Chef Lorenzo De Petris and Pizzaiolo Marcos Bonotto.
The à la carte menu is designed to transport guests to the heart of Naples, featuring traditional dishes inspired by Luca’s own upbringing. Highlights include Pasta alla Nerano – house-made spaghettoni with fried zucchini, garlic, basil, black pepper, provolone and parmigiano reggiano; the Montanara – golden fried dough topped with tomato, mozzarella and basil then finished in the wood-fired oven; and Fish of the Day Cartoccio – local market fish baked in paper with roasted capsicum, lemon, white wine and herbs. Every plate is a reflection of Luca’s roots, full of heart and flavour.
Luca’s return marks more than a guest chef appearance – it’s a reunion with the team and a tribute to the legacy he helped build. His cooking is guided by tradition and connection, with every dish crafted to make people feel welcome, well-fed, and happy.
