Behind the powerhouse team is Randa Assi, an industry veteran whose career includes international openings for Gordon Ramsay. She says the Seminyak café was designed to be different while staying true to what people love about Milk & Madu.
“I’ve lived in Seminyak for years and always believed in this area. Since 2022, the post-COVID boom and traffic in Canggu have brought people back here, and the renaissance has been huge. We have a long stretch of beaches, beautiful traditional villas, and tree-lined streets that still feel like old-school Bali. There was a real gap in this part of Seminyak. We have Revolver at one end and Watercress further down, but this stretch needed something. Since opening, we have already seen a lot of Balinese locals and expats who live nearby become part of our family.”
Spacious, open interiors glow in a sunshine palette of yellow, white and warm timber. A children’s play area keeps little ones entertained while parents linger over brunch. “Behind the scenes, we are working on a new bakery project, so I wanted to nod to our roots and start building a proper ready-to-go section of the menu,” Randa says. “Very Byron Bay. We think we have made some pretty good pies, quiches and sausage rolls, but we will leave it to the public to judge.”
The Low-Key Opening That Drew a Crowd
Even before opening day, curiosity was already pulling people inside. “People kept stopping to ask if they could come in,” Randa says. “We were still training, but we thought why not and invited them in with a big discount.”
The official opening felt more like a neighbourhood gathering than a formal launch. Long-time expats, nearby residents and industry friends filled the café, sipping cocktails, sampling canapés and catching up. Instead of a big fanfare, the team chose to celebrate with the people who had supported them from the beginning, a choice that perfectly captured the Milk & Madu spirit.
