DESCRIPTION:This 30 April\, Thursday\, Mosto presents the 4th volume of FERMENTO\, which leans into Burgundy\, with Chapuis & Chapuis on pour. \nA small organic producer based between Pommard and Ladoix-Serrigny\, run by brothers Romain and Jean-Guillaume Chapuis. Since 2009\, they’ve kept things simple\, low intervention\, no added sulphites\, and a clear focus on fruit without overworking it. \nWorking across their own vineyards and carefully sourced organic parcels\, the wines land clean\, expressive\, and just loose enough. Burgundy\, without the weight. \nOn pour for the night\, all by the glass: \nChapuis & Chapuis ‘La Bulle’ Blanc De Noir NV 2023\nLight blush\, fine bubbles\, fresh\, gently textured\, with soft red fruit and a saline finish. \nChapuis & Chapuis Bouzeron 2023\nTight and citrus-led\, green apple and preserved lemon\, with a clean mineral edge. \nChapuis & Chapuis Hautes-Côtes De Beaune Blanc 2024\nChardonnay with tension\, stone\, orchard fruit and a subtle\, rounded finish. \nChapuis & Chapuis Aloxe-Corton 1er Cru Rouge 2023\nA more structured Pinot\, layered with red fruit\, spice and quiet depth. \nChapuis & Chapuis Hautes-Côtes De Beaune Rouge 2024\nEasy\, light and lifted — fresh red fruit\, soft florals and a clean line through the finish. \nChapuis & Chapuis Pernand-Vergelesses Rouge 2023\nBright fruit\, gentle spice\, a little grip\,balanced and quietly complex. \nChapuis & Chapuis Savigny-lès-Beaune Rouge 2023\nYoung\, but already in place\, clean cherry\, fine tannin and a composed finish. \nMosto-style snacks will move through the table alongside. \nCome thirsty.
